Mi Cocina Monday




Ingredients for Homemade Taquitos:

-Trader Joe's Salsa Verde
-Shredded chicken breast
(I cooked it in the crock pot with seasonings, I really don't remember what all I threw in there...I guess what's in the picture and more...)
-corn tortillas
-hot oil
-toothpicks
-love


These are SO good when they're homemade and very easy to make. Your hard working man that LOVES mexican food will like it a lot!

You can also whip up homemade guacamole...Just avocados and more seasonings:
hot sauce
cumin
cayenne
salt & pepper

There's a theme here, can you tell?

Let's get started:

Heat up canola oil nice and hot in a skillet
On a hot griddle with a little butter, warm up tortillas
Stuff tortillas with chicken, not too much or else they fall apart
Wrap up and hold in place with toothpicks
Place in hot oil until crispy
The meat is cooked, so you just need lightly browned crispy tortillas.


It's yummy, filling, and easy!
